A class that is asked for constantly is Microsoft Access. I unfortunately have not found a way to deliver it easily in an hour and half class. This does not mean I do not search for other avenues for students. just because i do not teach it does not mean someone does not need to learn it. I came across the site inpics recently. Essentially they do online tours and classes of software including Access, Publisher, Word, Dreamweaver and many others. They offer screenshots of everything they are talking about. They are simple and easy to go through. The other really nice part is that it is totally free. So if you are looking to brush up on some new skills and you cannot get to a class this may be another option for you to give a try.
